There’s no internationally agreed definition for a ‘low carb’ diet but with our low carb recipes providing 15g of total carbs or less per serving, they work perfectly as part of any low carb eating plan.
Cooking for a family can be tricky when you’re following such a plan, that’s why we’ve included some all-time family favourites, including our hob-to-table moussaka. Simply adapt the recipe to suit the needs of other family members by adding toasted pitta. Likewise, with our chicken madras, add the normal curry accompaniments for those that need them and serve cauliflower rice to keep your plate low carb. When speed is of the essence our ricotta, tomato and spinach frittata can be on the table in minutes – what’s more this speedy traybake tastes as good as any pizza.
UK guidelines suggest we eat two portions of fish per week, with one being a fatty variety such as salmon – fatty fish are a valuable source of heart-healthy essential fats (omega-3) as well as a useful source of vitamin D. We’ve cooked our ginger and soy salmon en papillote, this parcel method delicately steams the fish and allows it to soak up the flavours and aromas of all the other ingredients – better still it keeps the pan clean, too! We’ve used the same cooking method for our cod and smashed celeriac – a perfect choice for a low carb diet, celeriac makes up for missing out on potatoes and contributes to your five-a-day.
One of the hardest things to give up when following a low carb plan are the comfort foods, so our Friday night treat – steak with rosemary celeriac fries, kale and garlic butter – solves this problem perfectly and won’t leave you wanting.
Using skin-on chicken thighs in our Spanish chicken traybake with chorizo and peppers not only keeps the chicken moist and succulent, but the fat from the skin plays a valuable role in managing your appetite, too. Serve with rice for those not following the low-carb plan.
