2. One-pan smoky veggie lentil lasagne

This nourishing and comforting recipe from NHS doctor Dr Chintal Patel packs in plenty of plants with a veggie bolognese base made from dried red lentils, chestnut mushrooms and courgettes. Mushrooms are a great addition to winter diets as they contain vitamin D – something most of us will be deficient in during the shorter, darker days, while red lentils are full of fibre, iron, B vitamins, magnesium and zinc. Even better, it’s all made in one dish so it’s nowhere near as much faff as a normal lasagne.
